My son came home for Christmas and announced that he was eating vegan. Vegan is strict vegetarian, eating no animal products. I hadbeen a vegetarian for many years, but I choose the ovo-lacto vegetarian because it was easier. Back in the’70-80’s the food choices where much more limited.
What to do? I was making lasagna for Christmas Dinner. I make a mean vegetarian lasagna with sausage on the side for the meat eaters in the family. I made a very good vegan lasagna.
I parboiled gluten free, rice noodles. These will not be as firm as regular lasagna noodles. Save the best ones for the top and be gentle with them.
I sauteed 1 chopped onion, 2 chopped garlic in EV olive oil. I added crumbled firm tofu and chopped spinach. I added a healthy dose of parsley, basil, oregano, salt, pepper
I used a good organic spaghetti sauce. And I grated vegan mozzarella “cheese”.
Then I layer the ingredients started with some sauce in the bottom of the pan, noodles, tofu mixture, sauce, “cheese” and repeated.
This was enough for a 9×9 square pan, which I baked at 350 degrees, covered 45 min and uncovered 20 minutes.
