Lets do a vegetable soup. It sure is cold up here in the Northeast.  There is a nasty snow storm hitting south and east of us. Our friends in Pennsylvania, Maryland, Virginia, Delaware, North Carolina are getting hit with some serious snow. I am not sure that it is coming here, this time.

It is winter. Even if you are losing weight, you need good hardy food. I made this great vegetable soup this past week. Kept me warm all week.

I started with Red Mill Vegi Soup Mix. The basic recipe is:
      1 part soup mix
      4 parts water/stock
      Add salt, vegies, meat as desired

I added the following and simmered for 1 hours:
      2 cups of soup mix
      2 cups home made vegetable stock
      4 cups water
      1 vegetable bullion cube
      1 cup chopped carrots
      1 cup chopped celery
      1 cup chopped onion
      1/4 cup barley (love barley)
      1 clove chopped garlic
      1 tbs dried parsley
      1 tsp dried basil
      salt/pepper to taste

This was yummy. I enjoyed several times this week.
