Some days you just don’t know what to eat. Today was one of them for me. I had to go to Super SaladPaterson, NJ and back. That is at least a 6 hour road trip day. We were up at 5:30 am!

My eating was off all day. That included timing and types of food. So I made up a super salad. It had everything including the kitchen sink… so to speak.

About 2 cups of mixed greens. On top I added chopped carrots, cucumbers, green pepper, radish, sweet onion, avocado, olives, orange pieces, tomatoes and sprouts.

Salad dressingI topped it off with a little Gazebo Room Balsamic Vinaigrette salad dressing.

I savored every mouthful. There were so many different flavors of sweet and salty. Then the textures of soft avocado and crunchy carrots. It was a mardi gras party in my mouth. This is great healthy eating.

It is also making think of summer and warm weather. 🙂
